CACAO CRIOLLO
It is considered by experts as the best grain, for its aroma and flavor. It is the model from which the others are classified. It is a fragile species to the environment and of scarce production. Currently it represents from 2% to 5% of the planet's trees and only 1% of world production. The fruit is long and grooved, pointed, soft, warty and with cotyledons or soft seeds.
CACAO TRINITARIO
It is a hybrid resulting from the cross between the criollo and the forastero. Its birth occurs in the areas of the Orinoco Delta in Venezuela.
It has the qualities that characterize the two species that its genes provide: it is aromatic, robust, with a great capacity to adapt to diseases and adverse agroecological conditions; it is also very productive and high yielding. It occupies 14% of world production. As an example we have the Upper Carenero, from Barlovento.
CACAO GUASARE
It is located south of Lake Maracaibo. Currently, their plantations are quite reduced. It is characterized by a green fruit, thin and moderately rough shell.
It is an excellent quality cocoa.
CACAO PORCELANA
It is cultivated in the south of Lake Maracaibo and in the Andean states. It has a very particular flavor and is classified by experts as an extra fine cocoa.
It is considered to have the best genetic quality of all cocoas grown in Venezuela.
